Chinese Recipes: Chinese Chicken With Rice

 
Chinese Chicken with Rice -- serves 4
 
Ingredients:
  • (1)
    1 T. ginger wine
    3 T. soy sauce
    1/2 t. salt
    1 t. sugar
    2 t. sesame oil
    1 T minced green onion
  • (2)
    1/3 lb. (150g) bamboo shoots
    1/3 lb. (150g) carrots
    4 t. chicken fat
    2/3 lb. (300g) chicken
    1-1/4 lb. (560g) germinated rice
    3-3/4 c. water
DIRECTIONS:
  1. Cut bamboo shoots and carrots into small cubes. Be careful not to cut your fingers!
  2. Cut chicken into thin, bite-sized pieces, soak in (1) for 20 minutes.
  3. Soak rice in water for 20 minutes, add (2) and mix. Boil this mixture on high-heat for 5 minutes, add the soaked chicken, turn to low heat for 15 minutes.
  4. Remove from heat and cover the rice for 5 minutes, and then serve.
